Did you know that New Zealand has only one commercial cranberry farm? It’s on the West Coast of the South Island, in Hokitika.

How to make a Hokitika Gold Rush cocktail

  • White Rum – 2 parts
  • Chambord – 1 part
  • Cranberry juice – 4 parts
  • Runny honey – 2 teaspoons

Pour the honey into the bottom of a champagne glass. Mix the rum, Chambord and cranberry juice together, shake with ice, then pour on top of the honey. Serve with a stirrer.

Tip: stir in the honey to sweeten the drink for personal taste.
